BBQ Fiesta Bowl

These easy-peasy BBQ Fiesta Bowls are packed with bright colors and bold flavors. We’re not blowin’ smoke when we say… your taste buds will thank you later.

BBQ Fiesta Bowl

You will need:

  • Sonny’s sliced and pulled pork tossed in Sonny’s BBQ sauce
  • 1 cup white or brown rice, cooked
  • 1/2 an avocado
  • 1/3 cup refried or black beans
  • 1/3 cup corn kernels
  • 1/4 cup sour cream
  • 1/4 cup Shredded Mexican blend cheese
  • Jalapeños, sliced thin
  • Chipotle Ranch, drizzled
  • Cilantro and lime wedges for garnish

Directions:

  1. Cook rice per package directions and reserve.
  2. In a sauté pan or microwave heat beans, meat, and corn separately until warm and reserve on a plate or baking sheet.
  3. To serve, portion the rice into bowls and top with the BBQ meat. Add remaining toppings and garnish with jalapeño, cilantro, cheese, and limes.
  4. Drizzle with chipotle ranch and enjoy!
