Sonny’s Recipe: Brisket Grilled Cheese

Melty, meaty, cheesy. We could go on and on about this Sonny’s fan favorite: the Brisket Grilled Cheese. Dependin’ on when you stumble upon this blog, it may be on or off the menu, but never fear. We’re sharin’ a simple way to make one at home in just a few steps.


In this recipe, we’ll make sure you have enough supplies to make two mouthwaterin’ sandwiches. Pro-tip: Save some time and swing by your local Sonny’s BBQ for some Certified Angus Beef Brisket by the pound. It’s just one of the slow-smoked BBQ meats fresh from our smoker that you can pick up anytime you need.

What You Need for the Brisket Grilled Cheese

Serves: 2
Cook Time: 20 minutes

Ingredients List

  • 2 lbs chopped Texas Style Brisket Point
  • 4 slices garlic bread
  • Butter
  • 4 slices Cheddar cheese
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/3 cup kosher salt
  • 1/3 cup freshly ground black pepper

Step-by-Step to Brisket Grilled Cheese Perfection

  1. Pre-heat skillet/griddle, coat with butter to prevent sticking
  2. Melt shredded cheeses, mix with chopped Brisket to create creamy consistency. Set aside.
  3. Place one slice of bread on skillet and one slice of cheddar cheese on top of that. Let sizzle for 1-2 minutes.
  4. Spoon cheesy brisket mixture on top of bread, then top with the other slice of cheese and bread.
  5. Flip and cook until cheese slices are melted.
  6. Carefully remove from heat, and enjoy.
  7. Repeat steps 3-6 as needed for multiple sandwiches.
