From the kitchen of Pitmaster Eileen O’Rourke, this recipe mixes sweet and heat for an appetizer you’ll keep coming back to.

You will need:
- Wooden skewers
- 1 lb shrimp fresh or frozen (if using frozen, thaw prior to marinating)
- ½ cup Olive Oil
- 2 tsp Old Bay Seasoning
- 2 garlic cloves, crushed
- ¼ cup Sonny’s BBQ Sweet sauce
- ¼ cup Sweet Thai (red) Chili sauce
- Salt and pepper
- Regular sliced bacon (not thick)
- Charcoal
- Non-stick spray
Directions:
- Soak wooden skewers in water for at least 30 minutes to avoid burning on grill.
- Marinate shrimp in ½ cup Olive Oil and 2 tsp. Old Bay Seasoning, fresh garlic, pinch of salt and pepper for 3-4 hours.
- Cut bacon in ½ and wrap around shrimp (do not overlap too much, cut the bacon if necessary).
- Take skewer and starting at the non-tail side of the shrimp, insert through shrimp and exit near the tail to secure the bacon.
- Refrigerate for 30 minutes.
- Spray the grill with non-stick spray.
- Place the shrimp on the grill, cook approx. 5-8 minutes.
- Combine ¼ cup Sonny’s BBQ sauce and ¼ cup Sweet Thai Chili.
- When bacon is crispy, brush with Thai Chili, BBQ sauce mixture, cook another minute or 2 and remove from grill.
